Creamy Rice Pudding

Here is a dessert that is simple and sweet. I especially love it because I usually have all of the ingredients on hand and it doesn't make a huge mess to prepare!

You Will Need:
  • 1/2 CUP RICE
  • 4 CUPS OF MILK
  • 1/4 CUP BUTTER
  • 3 EGGS
  • 3/4 CUPS SUGER
  • 1 TEASPOON VANILLA
  • 1/4 TEASPOON SALT
  • 1/2 TEASPOON NUTMEG
Note:  Nutmeg is essential to give the old time favorite its special goodness. You can substitute cinnamon instead of nutmeg.

Directions:

Combine rice and 2 cups of milk in top of boiler. Cover and cook over hot water until rice is tender; add butter.
( I don't have a boiler, so I place 2 cups of milk and rice in a small pot, and sit it on top of a lager pot that has water in it.)
In a separate bowl, beat eggs; mix in sugar , vanilla, salt and remaining milk.
Add hot rice mixture, mixing well pour into a buttered 2 quart baking dish.
( I use a loaf pan, so it does take a little longer to cook)
Sprinkle with nutmeg.
Bake in 350 DEGR. F. oven for 50 minutes or until silver knife comes out clean when inserted near center.
Let cool and enjoy. (Serves 6). If desired cold, let cool, and refrigerate.
